Twice Baked and Loaded

The Twice Baked and Loaded Potato Company( TBLPC) is a Frome based business set up and run by husband and wife team Nick and Renate Dove.
At a time when there is an immense variety of increasingly exotic fast food, TBLPC have chosen to take the humble potato and transform it into a delicious meal. Potatoes are healthy. At 110 calories each Potato contains no fat, sodium or cholesterol and provides nearly half our daily vitamin C value. It has more potassium than a banana, as well as fibre, magnesium and antioxidants.
Selecting all their ingredients from local farms and businesses TBLPC use traditional skills and methods to bake and fill the potatoes with a variety of fillings. By first placing the potatoes on a bed of rock salt and baking them slowly some of the moisture is drawn out during the initial cooking. Once cooled they are split in half and their contents passed through a moulin to reveal a silky mash. The empty skins are then further baked to develop a firm and slightly crisp base. Different ingredients such sun dried tomatoes, spring onion, chorizo, mozzarella, cheddar, feta and spinach are then added to the mash to provide a range of different fillings and then heaped into the skins for the second bake.
Serving them warm from the oven in recycled boxes TBLPC aim to provide a highly nutritious, varied and delicious meal at local events.
